The Bain Marie is a water-filled tray in which one or several Gastronorm containers can be suspended. The water is heated by an insulated heating element under the water tray. This means that there are no elements or other obstacles in the water tray. The advantages of this are that the tray is easier to clean and it extends the service life of the heating element. The built-in Bain Marie has a water level control which automatically keeps the water at the right level, preventing it from boiling dry. There is a selector button for two levels, for 150 mm or 200 mm deep Gastronorm trays. The water can be drained by means of a pushbutton on the control panel. Whether built in into your cooker or used as a stand-alone version for buffets, any size is possible.
